Sunday Supper

Time saver that is healthy, yummy, and cost less!  You can't beat that!  This is our new Sunday Supper, Homemade Chicken Nuggets and Baked Sweet Potato Chips. Mmmmmm!


Homemade Chicken Nuggets
Ingredients:
4-8 Boneless/Skinless Chicken Breast
Italian Bread Crumbs
Parmesan Cheese
3 Eggs

Directions:
PreHeat oven to 350degrees.
Rinse Chicken, Chop
Beat Eggs in a bowl, put the chicken in a bowl and coat with egg.
Pour about 1C of Bread Crumbs and 1C Parmesan Cheese into a Zip Closure Bag.  Put coated chicken in zip bag, about 15 at a time.  Shake and coat w/ breading. 
Take out and put on Tray.
Repeat until all chicken is breaded.  Then put Chicken in over for 15mins.

Cost:
I bought a tray of B/S Chicken Brst for $15, there were 12, I used 6 for one batch and 6 for the following weeks batch.  So cost of chicken was $7.50 this week.  I bought bread crumbs and parmesan cheese, they will make 4 batches of chicken.  They were each $1.50, so that's less than $.40 a batch.  Making these nuggets less than $8





 Homemade Baked Sweet Potato Chips
Ingredients:
4-6 Sweet Potatoes
EVOO
Salt and Pepper

Directions:
Peel Swt Pot, Cut into medalions, place of tray, cover in EVOO and Salt & Pepper to taste.

Cost:
I had all the ingredients for this part so it cost me nothing.  If I had had to buy the Sweet Potatoes, they usually run $.89/lb.  I would have had 3lbs, so it would have cost $1.78
Making the Total Cost less than $10!
